Cherries for this lot are depulped and fermented in open-air tanks for 12–18 hours before being soaked, washed, and dried for 20–30 days. The careful processing enhances the traditional spicy and chocolatey profile with an abundance of fruit, making it a standout among high-quality DRC coffees.
