This is our first release of the Ají Bourbon varietal, believed to be a natural mutation of Bourbon. The coffee was grown by young producer Brayan Smith on his farm, Las Brisas, in Huila, Colombia, where the varietal was first discovered. Ají Bourbon trees are known for their low yields, making these coffees relatively rare and highly prized for their remarkable aromatics.
