Coffees in the Foundation genre are balanced, clean and complex — with low bitterness and pleasing acidity. Flavours like these can only be achieved by growing the right coffee in the right place, with meticulous attention to detail during the harvesting process.
For many years Adolfo Henrique Ferreira has been leading the way in Brazilian specialty coffee. His offerings are renowned for their sweet, clean cup profiles, with most cultivated on his beloved farm Passeio. Fazenda Pico Mirante is his latest passion project, where lots are separated and dried on raised “African beds”, allowing a more even circulation of air around the ripe cherries.
This 100% Bourbon natural lot was picked from the topmost elevation of Pico Mirante, appropriately named “The Lookout”. Expect a warming, deep cup profile, with notes of hazelnut, chocolate and prune.
