A beautiful example of a high-quality Bourbon and Caturra washed-process Peru.
David Guevara Cotrina sits on the board of the forward-thinking Lima coffee cooperative in north-western Peru. As a producer himself, his 4.5 hectare farm is planted with 2.5 hectares’-worth of Bourbon and Caturra and grown entirely through the use of sustainable methods and materials.
Picked ripe and depulped the same or following day, cherries are fermented in open-air tanks for 48 hours. A triple-washing process follows before being spread evenly over raised beds. These shade-covered terraces host the coffee for around 25 days before the lot is considered perfect for shipment.
Store in a cool, dry place.
In nitrogen-flushed, valveless bags, oxygen content is reduced to under 3%, preserving optimal quality for up to 9 months.
Once open we recommend using within 7 days.
These coffees are shipped within 4 weeks of roasting and packing.
