On a ridge, high in the Andes Mountains, the town of Buesaco lies within the Nariño department of Colombia. The Cooperative de Cafés Especiales de Nariño has its offices, cupping lab and warehouses here, with the coop collecting coffee from the many smallholdings tucked into the slopes surrounding the town.
This coffee has been decaffeinated with the Ethyl Acetate process, using derivatives of fermented sugarcane and acetic acids. After submersion, the beans are flushed and the process repeated, reaching a minimum decaffeination level of 97%.
Store in a cool, dry place.
